I have nothing against vegan or gluten-free foods, but in general, vegan or gluten-free versions of baking leave me unimpressed with both the flavour and texture. I don’t seek these items out, because lets face it, why would I seek out a more expensive and less delicious version of anything?
However, I recently tried a cookie at a party and had to ask where they were from, since I couldn’t stop eating them and I thought it might be rude to pack them all in my pocket as we left. They were noticeably less sweet than typical cookies, but still had an outstanding flavour. The texture was light and airy, and slightly dried out in a way that melted in my mouth. They were great.
It turns out, these cookies were the Coconut, Oat, + Hemp cookies from the recently opened Food in the Nüd in the Ritchie area. I picked up a dozen from the retail store a few days later and found they were a bit more moist when fresh, and while still quite delicious, I discovered that letting them sit for a day dried them out to the perfect meltaway consistency. I know it sounds crazy to let your cookies dry out, and if you prefer yours moist by all means devour them immediately, but I thought the thin and loosly packed cookie really benefited from sitting.
These cookies just might become one of your go-to’s even if you’re not bound by dietary restrictions.
