My last post was about cooking dinner for families staying at Ronald McDonald House, and it referenced some Ginger Buttered Green Beans that we had made. Since the green beans were a big hit with kids and adults alike, I figured I better post the recipe for all to enjoy.
I love simple recipes that taste amazing, and these green beans definitely fit the bill on that count. They were really easy too, since the green beans that were provided were already trimmed and washed. Just blanche the beans in boiling salted water for 3-5 minutes depending on your desired level of crispness. And while we’re talking about trimming, don’t trim off the little squiggly end of the bean. I hate when people do that. It’s a perfectly good bit of the bean, so trim the stem and leave the squiggle. *end rant*
Making the sauce could not be much easier. I just happened to have some leftover ginger syrup in the fridge; you know, the one I shared the recipe for here, so I just used a ratio of 50% ginger syrup to 50% butter and put it on the stove to reduce it down for a couple minutes and thicken it. Toss the sauce with the blanched green beans and serve.
*optional- sprinkle the top with toasted walnuts
Ginger Buttered Green Beans
1 lb fresh green beans
1/4 cup butter
1/4 cup ginger syrup ( recipe here )
– blanch green beans in salted boiling water 3-5 minutes depending on desired crispness
– bring butter and ginger to a boil and reduce until thickened and sticky
– toss syrup with blanched beans and top with toasted walnuts. (optional)

I heard a lot of comments from the families that ate them that were very similar. I love them any way I can get them (except for canned, they are just nasty), but this was a very nice and interesting change. Thanks for reading!

A lot of people chop of the squiggle! Grrrr. Haha. At least freeze the squiggles for soup or something.
