Eggnog Ricotta Waffles

Ever since winning a beautiful new Breville waffle maker from  Karlynn at  The Kitchen Magpie, I’ve been consumed (meaning I’ve thought about it twice) with the idea of making a delicious waffle that would be a hit during the holiday season. So in the true spirit of Christmas competitiveness, I set out to make a waffle that could give the Magpie’s mini-doughnut waffle a run for it’s money. Because, let’s be honest, running for money is the only kind I’m interested in.

Eggnog Ricotta Waffles

To make sure my waffles came out on top, I added insult to injury by stealing the primary ingredients for my Eggnog Ricotta Waffles right from Karlynn’s own kitchen!

Point- Baconhound.

And then I added rum. Karlynn’s waffle may have doughnut, but mine has eggnog and liquor.

I think we can all see who the clear winner here is…

Eggnog Ricotta Waffles

In typical Baconhound fashion, I began with no plan, and made it up as I went. The result was a light, fluffy, flavour packed waffle that would be a great antidote to your weekend holiday hangover.

 

Eggnog Ricotta Waffles

1 1/2 cups AP flour

2 tsp baking powder

1/2 tsp baking soda

3/4 tsp each cinnamon and nutmeg

1/2 tsp salt

3 tbsp sugar

1/3 cup melted butter

2 large eggs

1 tsp vanilla extract

1/2 cup ricotta cheese

1 1/4 cup eggnog

3 tbsp spiced rum

Mix together all dry ingredients.

In a second bowl mix all remaining ingredients.

Add wet to dry and mix to combine. Do not over-mix or you’ll have tough waffles.

Add a small dollop of the batter to the centre of your awesome Breville waffle maker and close the lid.

Unless you totally screwed something up, you’ll end up with waffles that look like this…

    I am always waffles over pancakes. Every. Single. Time.
    Eggnog Ricotta sound amazing! All my favourite flavours! 🙂 (rum, spices, rum)
