Italian Style Cajun Shrimp
Extra virgin olive oil (good quality)
Coat shrimp in cajun spice and set aside.
Dice roma tomatoes and green onions
Heat olive oil and butter in large non-stick skillet over med/high heat
Add green onion and tomato. Cook until soft, stirring frequently.
Add shrimp and cook until outside is pink and inside is no longer translucent. (about 4 minutes)
Add a splash of white wine and simmer 10 minutes. Serve.
